Gloria's Macaroon Learning Curve

Dear Caroline,

I just wanted to email to say thank you for the brilliant class. Words can't describe how fantastic it was. As someone who has made and sold macaroons enough times, I know that there are as many highs as there are lows for the home baker. And that's what made it great for me; your refreshing and honest approach in embracing those macaroon learning curves as part of the process which in many respects, seemed equally as important.

What I gained from this is the importance of really focusing and noticing what is happening - from the texture to the consistency and using our knowledge (which you provided through your many trials and results) which isn't just about following the recipe, but by taking ownership. I must admit that I had been relying on this recipe from one expert and that recipe from another, and consequently blamed my confusion and results on that, so perhaps it was actually the fug of all those instructions that have made my results so inconsistent.

I will keep you posted on how I get on and will send pictures of my (more consistent) results. You are an inspiration - thanks again!!!
