Catherine's First Solo Macaroons

Just a quick email to thank you very much for the macaroon masterclass a couple of weeks back.  I did my first solo attempt yesterday and have attached a photo to show you the results (very impressive if I might say so myself - although certainly just beginners luck!) 

Not a crack in sight out of a batch of 30+ and very professional looking, particularly the pistachio ones. The chocolate ones were a little on the flat side though - I wonder if I over / under-folded the mixture : any thoughts?

But I've had rave reviews from my family and colleagues and they're now demanding "Macaroon Monday" on a more regular basis!
