We had great weather last weekend and I was demonstrating how to make scones and cakes at The Tea and Coffee Festival.

Somehow I need to control my nerves. It is one thing to  teach on a hands-on basis and quite another to stand up in front of 40 - 50 people, try and entertain them and make sure the cooking comes out perfectly.But it worked, despite having forgotten my weighing scales for the scone demonstration and having to estimate the quantities by eye.

Just so you know it really is me in the picture above here I am again, although I could probably have done with not being captured as a startled rabbit! One friend did  suggest not using the following words again ".... and now I am offering the bottom up (for the butter icing) as we are joining the two bottoms together",  but I don't think too much harm done.

The coffee cake recipe I used at the Festival will be posted here later this week.  I would greatly appreciate any feedback or problems is cooking. I shall also cover a few of the questions that I was asked by members of the audience. Yael Rose, who organised the Festival, also puts on the Chocolate Festival and and the Wine and Cheese Festival, also at the Southbank. Thanks Yael, a great two days.

  1. We saw you on Sunday at the festival. Made our first batch of scones today with your recipe and couldn't believe how well it worked. All gone in no time. Thanks Caroline!
